Roll with curd and berry filling: an easy dessert for any season

This tender roll will be a great dessert for any season. In summer it can be prepared with fresh berries, and in winter - with frozen fruit or even bananas. The recipe is based on airy walnut dough and soft cottage cheese cream, which makes the pastry especially tender and flavorful.

Ingredients:
For the dough:

4 eggs
120 g sugar
60 g flour
60 g ground nuts
a pinch of salt
For the filling:

250 g cottage cheese
40 g sugar
125 g fresh or frozen berries
How to prepare the base for the roll
Preheat the oven to 180 degrees. Separate the eggs into whites and yolks. Beat the yolks with sugar until light and fluffy. Gradually add the flour and ground nuts, mix gently.

In a separate bowl, beat the whites with salt to stiff peaks. Carefully combine them with the main mass, trying to keep the dough airy.

Pour the dough onto a baking tray (approximately 27x34 cm) lined with parchment, flatten and bake for 12-15 minutes. Check the readiness by pressing lightly: if the dough is elastic and regains its shape, it is ready.

Wrapping the roll
Prepare a damp towel and a second sheet of parchment. Immediately transfer the finished crust to the towel, cover with the parchment and roll up into a roll. Unroll after a few seconds, then roll again, but without the towel. Leave to cool.
Preparing the cream
Rub the cottage cheese through a sieve to make it homogeneous. Add the sugar and berries. If using large fruits, cut them into small pieces.

Unroll the roll and spread the filling evenly. Carefully roll it back up, wrap it in foil and send it to the refrigerator for at least 2-3 hours, or better - overnight.

Before serving, you can decorate the roll with powdered sugar or fresh berries. This dessert is light, but at the same time hearty, and will be perfect for a weekday tea party, as well as for a festive table.
